Seasonality gives pastry its quiet urgency. A berry tart in peak season needs less intervention because the ingredient is already carrying the story.
This month, we are working with bright citrus, early berries, roasted pistachio, vanilla, and soft herbs. Each one brings a different kind of lift.
The goal is balance: acidity to cut cream, bitterness to steady sweetness, and aroma to make the first bite linger.
